Ingredients list for Sticky Date Pudding - Nutralite
- 1 cup Refined flour (maida) sifted
- 1 cup Dates pitted and chopped
- 90 grams Nutralite
- 1/2 cup Soft brown sugar
- 1/2 teaspoon Soda bicarbonate
- 2 Eggs
- 1 teaspoon Vanilla essence
- For sauce
- 1 cup Soft brown sugar
- 1 cup Cream
- 90 grams Nutralite
- 1/2 teaspoon Vanilla essence
Method
- Preheat the oven to 180°C.
- Brush a deep seven inch square cake tin with melted Nutralite and line the base with butter paper.
- Put dates and soda bicarbonate in a heat proof bowl and add one cup of boiling water. Stir and leave for fifteen minutes.
- Using an electric beater, beat the Nutralite and brown sugar until light and creamy. Beat in eggs gradually. Add vanilla essence.
- Fold in half of the sifted flour then half of the date mixture. Stir in the remaining flour and dates. Mix well.
- Pour into the prepared tin and bake in the preheated oven for fifty minutes or till a skewer inserted in the pudding comes out clean.
- Leave the pudding in the tin to cool for ten minutes before turning out.
- To make the sauce, take sugar, cream, Nutralite and vanilla essence in a pan and bring to a boil, stirring continuously. Reduce the heat and simmer for five minutes.
- Serve warm with hot sauce.
