By Sanjeev Kapoor 01 Sep 2016 in Recipes Course New Update Main Ingredients Refined flour (maida), Dates Cuisine British Course Desserts Prep Time 26-30 minutes Cook time 51-60 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Advertisment Ingredients list for Sticky Date Pudding - Nutralite 1 cup Refined flour (maida) sifted 1 cup Dates pitted and chopped 90 grams Nutralite 1/2 cup Soft brown sugar 1/2 teaspoon Soda bicarbonate 2 Eggs 1 teaspoon Vanilla essence For sauce 1 cup Soft brown sugar 1 cup Cream 90 grams Nutralite 1/2 teaspoon Vanilla essence Method Advertisment Preheat the oven to 180°C. Brush a deep seven inch square cake tin with melted Nutralite and line the base with butter paper. Put dates and soda bicarbonate in a heat proof bowl and add one cup of boiling water. Stir and leave for fifteen minutes. Using an electric beater, beat the Nutralite and brown sugar until light and creamy. Beat in eggs gradually. Add vanilla essence. Fold in half of the sifted flour then half of the date mixture. Stir in the remaining flour and dates. Mix well. Pour into the prepared tin and bake in the preheated oven for fifty minutes or till a skewer inserted in the pudding comes out clean. Leave the pudding in the tin to cool for ten minutes before turning out. To make the sauce, take sugar, cream, Nutralite and vanilla essence in a pan and bring to a boil, stirring continuously. Reduce the heat and simmer for five minutes. Serve warm with hot sauce.
