Ingredients
- 10-12 button mushrooms, cut into quarters
- 12-15 cashew nuts
- 1½ tablespoons oil
- 1 teaspoon mustard seeds
- ½ teaspoon split skinless black gram (urad dal)
- 4-5 curry leaves
- ½ tablespoon ginger-garlic paste
- 2 medium onions, chopped
- 1 medium tomato, chopped
- 1 cup tomato puree
- 1 tablespoon sambhar masala powder
- ½ teaspoon turmeric powder
- Salt to taste
- 1 tablespoon freshly chopped coriander leaves
- 1 tablespoon fresh cream
- Sprig of coriander for garnish
Method
- Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add urad dal, curry leaves and ginger-garlic paste, sauté well.
- Add onions and sauté till golden brown. Add cashew nuts and mix well. Add tomato, mix well and cook till pulpy.
- Add tomato puree, mix well. Add sambhar masala powder, turmeric powder and mix well.
- Add mushrooms and salt, mix well. Cover and cook for 4-5 minutes or till the mushrooms are cooked completely.
- Add chopped coriander and fresh cream, mix well. Transfer to a serving bowl.
- Garnish with a sprig of coriander and serve hot.
