South Indian Mushroom Masala

A delicious and lip-smacking mushroom recipe with the flavours of South India. Mushrooms cooked in onion tomato based gravy and flavoured with Indian spcies. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 10-12 button mushrooms, cut into quarters
  • 12-15 cashew nuts
  • 1½ tablespoons oil
  • 1 teaspoon mustard seeds
  • ½ teaspoon split skinless black gram (urad dal)
  • 4-5 curry leaves
  • ½ tablespoon ginger-garlic paste
  • 2 medium onions, chopped
  • 1 medium tomato, chopped
  • 1 cup tomato puree
  • 1 tablespoon sambhar masala powder
  • ½ teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon freshly chopped coriander leaves
  • 1 tablespoon fresh cream
  • Sprig of coriander for garnish

Method

  1. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add urad dal, curry leaves and ginger-garlic paste, sauté well.
  2. Add onions and sauté till golden brown. Add cashew nuts and mix well. Add tomato, mix well and cook till pulpy.
  3. Add tomato puree, mix well. Add sambhar masala powder, turmeric powder and mix well.
  4. Add mushrooms and salt, mix well. Cover and cook for 4-5 minutes or till the mushrooms are cooked completely.
  5. Add chopped coriander and fresh cream, mix well. Transfer to a serving bowl.
  6. Garnish with a sprig of coriander and serve hot.
