Ingredients 

  • 4 medium sweet potatoes (shakkerkand) , scrubbed clean and cut into cubes
  • 1/4 cup green peas (matar)
  • 4 tablespoons sunflower oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon ginger , finely chopped
  • 2-3 green chillies, , finely chopped
  • 1 1/2 tablespoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 1/2 teaspoons dried mango powder (amchur)
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 10-12 Fresh coriander sprigs + to garnish
  •  Fresh red chilli to garnish

Method

  1. Heat sunflower oil in a non-stick pan, add cumin seeds, ginger and green chillies, stir and sauté till fragrant.
  2. Add sweet potatoes, toss and cook for 2-3 minutes.
  3. Add coriander powder, cumin powder, red chilli powder, turmeric powder, dried mango powder, garam masala powder and salt, mix well and cook for 2-3 minutes.
  4. Add green peas and mix. Add water as required, cover and cook for 6-8 minutes.
  5. Finely chop coriander leaves, add to the pan and mix.
  6. Transfer into a serving bowl, garnish with coriander sprigs and red chilli and serve hot.
