Ingredients
- 4 medium sweet potatoes (shakkerkand) , scrubbed clean and cut into cubes
- 1/4 cup green peas (matar)
- 4 tablespoons sunflower oil
- 1 teaspoon cumin seeds
- 1 tablespoon ginger , finely chopped
- 2-3 green chillies, , finely chopped
- 1 1/2 tablespoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1 1/2 teaspoons dried mango powder (amchur)
- 1 teaspoon garam masala powder
- Salt to taste
- 10-12 Fresh coriander sprigs + to garnish
- Fresh red chilli to garnish
Method
- Heat sunflower oil in a non-stick pan, add cumin seeds, ginger and green chillies, stir and sauté till fragrant.
- Add sweet potatoes, toss and cook for 2-3 minutes.
- Add coriander powder, cumin powder, red chilli powder, turmeric powder, dried mango powder, garam masala powder and salt, mix well and cook for 2-3 minutes.
- Add green peas and mix. Add water as required, cover and cook for 6-8 minutes.
- Finely chop coriander leaves, add to the pan and mix.
- Transfer into a serving bowl, garnish with coriander sprigs and red chilli and serve hot.
