This recipe is from FoodFood TV channel By Sanjeev Kapoor 24 Feb 2022 in Recipes Veg New Update Shakkarkandi Matar Masala Main Ingredients Sweet potatoes (shakkerkand), Green peas (matar) Cuisine Indian Course Main Course Vegetarian Prep Time 6-10 minutes Cook time 21-25 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients 4 medium sweet potatoes (shakkerkand) , scrubbed clean and cut into cubes 1/4 cup green peas (matar) 4 tablespoons sunflower oil 1 teaspoon cumin seeds 1 tablespoon ginger , finely chopped 2-3 green chillies, , finely chopped 1 1/2 tablespoons coriander powder 1 teaspoon cumin powder 1 teaspoon red chilli powder 1/2 teaspoon turmeric powder 1 1/2 teaspoons dried mango powder (amchur) 1 teaspoon garam masala powder Salt to taste 10-12 Fresh coriander sprigs + to garnish Fresh red chilli to garnish Method Heat sunflower oil in a non-stick pan, add cumin seeds, ginger and green chillies, stir and sauté till fragrant. Add sweet potatoes, toss and cook for 2-3 minutes. Add coriander powder, cumin powder, red chilli powder, turmeric powder, dried mango powder, garam masala powder and salt, mix well and cook for 2-3 minutes. Add green peas and mix. Add water as required, cover and cook for 6-8 minutes. Finely chop coriander leaves, add to the pan and mix.
