Ingredients list for Seafood Risotto-SK Khazana
- 8-10 Clams
- 1/4 cup Small prawns shelled and deveined
- 2 Rawas fillets cut into cubes
- 3/4 cup Arborio rice
- 1 tablespoon Olive oil
- 1 tablespoon Garlic finely chopped
- 1 Medium onion finely chopped
- 1/2 cup White wine
- 3 cups Vegetable stock
- to taste Salt
- to taste Black pepper powder
- 50 grams Parmesan cheese
- 1/2 tablespoon Fresh parsley chopped
- to garnish Fresh parsley sprig
Method
- Heat olive oil in a non-stick pan. Add garlic and sauté till fragrant. Add onion and sauté till translucent.
- Add Arborio rice and mix well. Add white wine, mix well and cook for 1-2 minutes.
- Add clams, mix and cook till they start opening up. Add 1½ cups vegetable stock, stir to mix and cook for 20-25 minutes.
- Add prawns, rawas, salt and remaining stock and mix well. Cook till everything is well cooked.
- Add pepper powder, grate in cheese, add parsley and mix well.
- Garnish with parsley sprig and serve hot.
