By Sanjeev Kapoor 26 Nov 2018 in Recipes Course New Update Main Ingredients Clams, Small prawns Cuisine Italian Course Rice Prep Time 11-15 minutes Cook time 41-50 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Seafood Risotto-SK Khazana 8-10 Clams 1/4 cup Small prawns shelled and deveined 2 Rawas fillets cut into cubes 3/4 cup Arborio rice 1 tablespoon Olive oil 1 tablespoon Garlic finely chopped 1 Medium onion finely chopped 1/2 cup White wine 3 cups Vegetable stock to taste Salt to taste Black pepper powder 50 grams Parmesan cheese 1/2 tablespoon Fresh parsley chopped to garnish Fresh parsley sprig Method Heat olive oil in a non-stick pan. Add garlic and sauté till fragrant. Add onion and sauté till translucent. Add Arborio rice and mix well. Add white wine, mix well and cook for 1-2 minutes. Add clams, mix and cook till they start opening up. Add 1½ cups vegetable stock, stir to mix and cook for 20-25 minutes. Add prawns, rawas, salt and remaining stock and mix well. Cook till everything is well cooked. Add pepper powder, grate in cheese, add parsley and mix well.
