Ingredients list for Schezwan Chicken Tikka
- 2 Boneless Chicken Breasts cut into 2 inch cubes
- 5 tablespoons Schezwan Chutney
- 2 small Onions quartered and layers separated
- 1/4 Green capsicum cut into 1 inch pieces
- 1/4 Red capsicum cut into 1 inch pieces
- 1/4 Yellow capsicum cut into 1 inch pieces
- 1/4 cup Mayonnaise
- 1 tablespoon Oil
Method
- Place chicken pieces in a bowl. Add 3 tbsps schezwan chutney and mix well.
- Add onion, green, red and yellow capsicums and mix. Set aside for 15 minutes.
- To make the dip, mix together remaining Schezwan chutney and mayonnaise in a bowl.
- Heat a non-stick grill pan. Skew the chicken and vegetable pieces on satay sticks in this manner: chicken, onion, yellow capsicum, onion, green capsicum, chicken, red capsicum, onion and chicken.
- Place the sticks in the grill pan. Pour oil over the tikkas. Rotate the sticks so that the tikkas are evenly done on all sides.
- Arrange the tikkas on a serving plate and serve hot with the Schezwan-mayonnaise dip.
