Add 3 tbsps schezwan chutney and mix well. Add onion, green, red and yellow capsicums and mix. Set aside for 15 minutes. To make the dip, mix together remaining Schezwan chutney and mayonnaise in a bowl. Heat a non-stick grill pan. Skew the chicken and vegetable pieces on satay sticks in this manner: chicken, onion, yellow capsicum, onion, green capsicum, chicken, red capsicum, onion and chicken. Place the sticks in the grill pan. Pour oil over the tikkas. Rotate the sticks so that the tikkas are evenly done on all sides. Arrange the tikkas on a serving plate and serve hot with the Schezwan-mayonnaise dip.
