Ingredients list for Sans Rival
- 9 Eggs
- Almonds
- 2 cups Almonds
- 1 1/2 cups Castor sugar (caster sugar)
- 1 teaspoon Baking powder
- 1 cup Cream
- 6 Cherries
Method
- Break eggs and separate egg whites. Grind the almonds to a fine powder keeping aside a few for garnish. Preheat the oven to 180ºC.
- Beat egg whites stiff, till they stand up in peaks. Add sugar very gradually, beating continuously. Lastly beat in ground almonds and baking powder.
- Grease two small pie dishes and pour the mixture equally between them. Bake in the preheated oven at 180ºC till the tops are a faint golden in colour. Remove and cool.
- Whisk cream till it is fairly thick. Sandwich the cream between the two pies and decorate with the almonds and cherries. To serve cut in slices.
