How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Risotto With Three Cheeses Recipe

  • Arborio Rice 1 1/2 cup

  • Processed cheese grated 2 tablespoons

  • Parmesan cheese grated 2 tablespoons

  • Mozzarella cheese grated 2 tablespoons

  • Butter 4 tablespoons

  • Onion sliced 1 medium

  • Shallot halved 2

  • Garlic chopped 2-3

  • Dried mixed herbs 1 tablespoon

  • Vegetable stock 4 cups

  • Salt to taste

  • Peppercorns crushed 10-12

  • Cream 1/2 cup

Method

Step 1

Heat butter in a pan; add onion, shallots, garlic and herbs and cook till golden brown. Add the rice and sauté for two to three minutes till well coated with butter.

Step 2

Stir in the vegetable stock, season with salt and crushed peppercorns and simmer till the rice is cooked. Add processed cheese, mozzarella and cream and stir gently to mix.

Step 3

Serve hot, sprinkled with grated Parmesan cheese.
