Ingredients list for Pumpkin Seed Biscuits
- ½ cup + 2 tablespoons Pumpkin seeds
- 1¼ cups Refined flour (maida)
- 1 cup Olive oil
- 4 tablespoons Yogurt
- Juice of 1 lemon
- ¾ cup light brown sugar
- 1 cup Oats roasted
- ½ cup Desiccated coconut
- Zest of 3 lemons
Method
- Preheat oven to 180°C.
- Whisk together olive oil, yogurt, lemon juice and brown sugar till well mixed.
- Add flour, oats, desiccated coconut and lemon zest and mix till a sticky dough is formed.
- Divide the mixture into 24 equal portions and place them on a baking tray. Press them lightly.
- Place the tray in the preheated oven and bake for 10-15 minutes. Remove from heat and cool.
- Serve or store in an air tight container.
