Ingredients list for Prawns Provencale
- 12-16 Prawns shelled and deveined
- 2 teaspoons Lemon Juice
- to taste Salt
- 2 medium Onions finely chopped
- 6-8 cloves Garlic finely chopped
- 1 bunch Parsley
- 6-7 medium Tomatoes blanched, peeled and chopped
- 1 teaspoon Olive oil
- 1 Bay leaf
- 1/2 teaspoon Black peppercorns crushed
Method
- Marinate the prawns with lemon juice and a little salt preferably in the refrigerator till required. Reserve a few sprigs of parsley for garnish and finely chop the remaining. Heat olive oil in a non-stick pan, add bay leaf and garlic and stir fry for half a minute.
- Add onions and cook on medium heat, stirring continuously, till onions turn transluscent. Add tomatoes and three fourth cup of water, cover and cook on medium heat for five minutes, stirring occasionally.
- Add marinated prawns, salt and crushed peppercorns. Stir and cook over medium heat for three to four minutes or till prawns are just cooked. Add chopped parsley and mix well. Serve hot garnished with the reserved parsley sprigs.
