Ingredients list for Potato Bhaji
- 6-7 medium Potatoes
- 3 tablespoons Musterd seeds
- 1/2 teaspoon Mustard seeds
- 10-12 Curry leaves
- 2 tablespoons Split black gram skinless (dhuli urad dal)
- 2 whole po Dry red chilies,broken into 2
- 1 medium Onion,sliced finely
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 1/2 cup Coconut,scraped
- 2 tablespoons Fresh coriander leaves,finely chopped
Method
- Heat oil in a kadai. Add mustard seeds and let them crackle. Add curry leaves and urad dal and sauté till dal turns light brown. Stir and add red chillies, sliced onion and sauté till translucent. Add turmeric powder.
- Stir well, add potato cubes and salt. Stir well and cook covered for five minutes on low heat till the potatoes are done. Add scraped coconut and stir with light hand.
- Remove from heat. Garnish with chopped coriander leaves and serve hot.
