Ingredients
- 2 chicken legs
- 2 tablespoons piri piri spice mix
- Salt to taste
- 1 tablespoon freshly chopped parsley leaves
- 2 tablespoons olive oil
- ½ lemon
- Mashed potatoes to serve
- Sautéed vegetables to serve
Method
- Preheat oven at 150˚C. Line a baking tray with a griller.
- In a bowl, add chicken legs, piri piri spice mix, salt, chopped parsley, olive oil, squeeze lemon juice, and rub well. Set aside to marinate for 30 minutes.
- Place it on the baking tray and bake for 30-35 minutes.
- Serve hot with mashed potatoes and sautéed vegetables.
