Ingredients list for Pineapple Muffins
- 2 slices Pineapple chopped
 - 2 cups Refined flour (maida)
 - 2 cups Castor sugar (caster sugar)
 - 5 Eggs
 - a pinch Salt
 - few drops Vanilla essence
 - 2 cups Margarine
 - 1 teaspoon Baking powder
 - 50 millilitres Milk
 
Method
- Preheat the oven at 180°C. Chop pineapple slices roughly. Place margarine in a bowl, add sugar and blend with a hand blender till well blended. Break eggs one by one and continue to blend after each addition. Add salt and vanilla essence.
 - Sift refined flour and baking powder into the bowl and keep blending. Add milk and mix with a spoon. Add pineapple and a little water and mix well.
 - Half fill muffin moulds with the batter. Place them in the preheated oven and bake for 20 minutes. Remove from the oven and serve warm.
