Pepper Chili Sauce

Ingredients list for Pepper Chili Sauce

  • 7-8 black peppers, crushed
  • 3 medium green capsicums, cut into 1/4 inch pieces
  • 1 teaspoon red chilli powder
  • 4-5 cloves
  • 1 inch cinnamon
  • 6 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 1/2 cup brown sugar
  • 1/4 cup cider vinegar
  • 1 bay leaf
  • Salt to taste

Method

  1. Place cloves and cinnamon in a microwave plate and dry roast on Microwave HIGH for two minutes. Grind to a coarse powder. Place tomatoes, onions, brown sugar, cider vinegar (replace with any available vinegar), clove-cinnamon powder, red chilli powder and bay leaf in a large microwave bowl.
  2. Cover and cook on Microwave HIGH for fifteen minutes. Remove. Stir in capsicums, salt and add freshly crushed peppercorns. Cook, uncovered, on Microwave HIGH for fifteen minutes or until the mixture thickens.
  3. Remove the bay leaf and pour into hot, sterilized jars. Seal and cover. Best stored in the refrigerator.
