Ingredients
- 300 grams penne, boiled
- 1/2 cup pureed yellow bell pepper
- 1/2 cup pureed red bell pepper
- 1 yellow bell pepper, roasted, peeled and cut into strips
- 1 red bell pepper, roasted, peeled and cut into strips
- 4 tablespoons extra virgin olive oil
- 4 garlic cloves,chopped
- 60 grams shallots, peeled and halved
- 8 fresh basil leaves
- Crushed black peppercorns to taste
- Salt to taste
- 150 grams goat cheese
Method
- Heat 2 tbsps extra virgin olive oil in a non stick pan, add garlic and sauté for few minutes. Add shallots and sauté.
- Add roasted bell pepper strips and sauté for a few minutes. Tear basil leaves and add the mixture.
- Add red and yellow bell pepper purees and mix well.
- Add boiled penne and crushed black peppercorns and mix well.
- Add remaining extra virgin olive oil and salt and mix well.
- Garnish with goat’s cheese and serve.
