Ingredients list for Penne With Pepper Couli

  • 300 grams Penne boiled
  • 1/2 cup Mixed Bell Peppers pureed
  • 1/2 cup Red bell pepper pureed
  • 1 strips Yellow bell pepper Roasted and peeled
  • 1 strips Red bell pepper Roasted and peeled
  • 4 tablespoons Extra virgin olive oil
  • 4 Garlic cloves chopped
  • 60 grams Shallots peeled and halved
  • 8 Fresh basil leaves
  • to taste Crushed black peppercorns
  • to taste Salt
  • 150 grams Goat cheese

Method

  1. Heat 2 tbsps extra virgin olive oil in a non stick pan, add garlic and sauté for few minutes. Add shallots and sauté.
  2. Add roasted bell pepper strips and sauté for a few minutes. Tear basil leaves and add the mixture.
  3. Add red and yellow bell pepper purees and mix well.
  4. Add boiled penne and crushed black peppercorns and mix well.
  5. Add remaining extra virgin olive oil and salt and mix well.
  6. Garnish with goat’s cheese and serve.
