Ingredients list for Penne In Thousand Island

  • 1 cup Penne pasta boiled
  • 1/2 cup Thousand island dressing
  • 1/2 medium Green capsicum cut into small pieces
  • 3-4 French beans large diagonal pieces, blanched
  • 1/4 small Broccoli separated into small florets, blanched
  • 1 medium Carrots large pieces, blanched
  • 4-5 Black olives
  • 5-6 Lettuce leaves torn
  • 3-4 Basil leaves
  • 10-12 Cherry tomatoes halved

Method

  1. Place the penne in a large bowl.
  2. Add green capsicum, French beans, broccoli, carrot, black olives, lettuce and sweet basil and toss.
  3. Add cherry tomatoes and Thousand Island dressing and mix well.
  4. Serve chilled.
