Ingredients list for Pear Upside Down Cake
- 4 Pears peeled and cored
- 2 cups Refined flour (maida)
- 1 teaspoon Baking powder
- 2 1/2 cups Butter
- 2 cups Castor sugar (caster sugar)
- 5 Eggs
- few drops Vanilla essence
- 1/4 cup Milk
- 1/2 cup Brown sugar
Method
- Preheat the oven at 180°C. Slice each pear into ½ inch thick slices. Put 2 cups butter into a bowl, add sugar and whisk with a hand blender till light. Add vanilla essence, eggs one by one and continue to whisk.
- Sift refined flour and baking powder into the bowl and mix. Add milk and mix.Line a non stick spring bottom cake tin with butter paper. Grease the base of the tin with a little butter.
- Cream remaining butter and brown sugar well and spread at the base of the cake tin evenly.Arrange all the pear slices, overlapping each other and press well.Pour the batter over and level the surface. Keep the tin in the preheated oven and bake for 40 minutes or till done.
- Remove the tin from the oven. Keep a serving plate over the tin and turn it upside down. Unlock the sides and bottom of the tin and lift gently. Serve with the pear side on top.
