Ingredients list for Paneer Bruschetta with Tamarind Chutney
- 1 cup Cottage cheese (paneer) crumbled
- 1 Baguette cut into 1 inch thick slices
- Tamarind chutney for topping
- 1 cup Cherry tomatoes halved
- 2 medium Onions chopped
- 1 teaspoon Olive oil
- 1 tablespoon Fresh coriander leaves chopped
- to taste Salt
Method
- Heat a non-stick pan and toast the baguette slices. Remove from heat and set aside.
- Combine cherry tomatoes, onions, cottage cheese, olive oil, coriander leaves and salt in a bowl and refrigerate for twenty minutes.
- Top each toasted slice with generous amount of the tomato mixture. Top with tamarind chutney and serve immediately.
