Pancakes Premix

Ingredients 

  • 1½ cups refined flour (maida)
  • 5 tablespoons milk powder
  • 5 tablespoons cornflour/cornstarch
  •  ¾ teaspoon baking powder
  •  ¾ cup castor sugar (caster sugar)
  • 2 tablespoons melted butter
  • Cold butter cubes to serve
  • Honey to serve
  • Fresh fruits to serve

Method

  1. Sieve refined flour into a large bowl. Add milk powder, cornflour, baking powder and castor sugar and whisk till well combined.
  2. Transfer into an air-tight container and store for up to 20 days in a dry place.
  3. For making one portion, take 1 cup of the prepared pre-mix in a bowl, add 2 tbsps melted butter and ½ cup water and mix well. Rest the batter for 5-10 minutes.
  4. Heat a non-stick pan, drizzle some melted butter and spread it with tissue paper. Pour a ladle of batter and cook on medium heat till the underside is golden brown.
  5. Flip the pancake and cook the other side till cooked completely. Make more pancakes similarly.
  6. Transfer them onto serving plates and serve hot with butter, honey and fresh fruits.
