Ingredients list for Paan Mousse
- 3-4 Readymade masala paan
- 2 cups Whipped cream
- 1/2 cup White chocolate ganache
- 1 tablespoon Gelatin
- for platin Chocolate soil
- for platin Gulkand
Method
- Break the paans and put them into a mixer jar and grind into a coarse paste.
- Transfer the paste into a bowl, rinse the mixer jar with a little water and add to the paste and mix well.
- Take gelatin in a small bowl, add 2 tablespoon water, mix well and set aside to bloom.
- Take whipped cream in a large bowl, add white chocolate ganache and mix well. Add 3-4 tablespoons of pan mixture and mix well.
- Add the bloomed gelatin and mix well. Refrigerate for 2-3 hours or till the mixture is almost set.
- Transfer the mousse into a piping bag fitted with a star nozzle.
- Put a spoon full of chocolate soil in each serving shot glass, spread some gulkand on it and pipe the mousse over it.
- Garnish with a pan leaf and some gulkand serve chilled.
