Ocean's Cocktail

Ingredients

• 8 tablespoons blue curacao 
• 4 cups pineapple juice 
• 120 ml vodka
• 12 tablespoons desiccated coconut + as required
• 4 tablespoons lemon juice
• 8 tablespoons sugar syrup 
• 8 tablespoons coconut cream 
• Crushed ice cubes as required
• Lemon slice for garnishing

Method

1. Blend together 3 tablespoons desiccated coconut, pineapple juice, vodka, lemon juice, sugar syrup, coconut cream and blue curacao into smooth mixture. 
2. Apply some lemon juice on the rim of a tall serving glass and coat the rim with some desiccated coconut. Pour the pineapple mixture and put some crushed ice cubes on top. 
3. Serve chilled garnished with lemon slice.
