If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Nilgiris Pachadi Recipe

  • Carrots 1 medium

  • Yogurt 1 small

  • Red capsicum 1/2

  • Green capsicum 1/2

  • Cucumber 1

  • Green grapes 10-15

  • Black grapes 10-15

  • Peach 2

  • Apple 1 small

  • Sunflower seeds (charoli/chironji) 1 tablespoon

  • Walnuts chopped 1 tablespoon

  • Tomatoes 2

  • Yogurt 4 tablespoons

  • Fresh coriander leaves sprigs a few


Step 1

Grate the carrot fine. Finely slice the onions.Cut the red and green capsicum and cucumber into small cubes.

Step 2

Halve the grapes and peel and slice the peaches.

Step 3

Peel and slice apple. Wash and chop the coriander leaves.

Step 4

Place all the ingredients in a mixing bowl, add the sunflower seeds and walnuts.

Step 5

Add yogurt, mix gently.Garnish it with chopped coriander leaves.
