Ingredients list for Nihari Masala
- 12-15 Green Cardamom
- 4 tablespoons maze
- 4 tablespoons Cumin seeds
- 25-30 Black peppercorns
- 2 tablespoons Cloves
- 4-5 inch piece Cinnamon
- 5 Green cardamom
- 3 Black cardamom
- 1 blade Mace
- 4-5 tablespoons Poppy seeds (khuskhus/posto)
- 4-5 tablespoons Roasted chana dal (dalia)
- 2 Bay leaves
- 1/2 tablespoon Nutmeg,grated
- 2 tablespoons Dry ginger powder (soonth)
Method
- Dry roast red chillies fennel seeds, cumin seeds, black peppercorns, cloves, cinnamon, green cardamoms, black cardamoms, mace, poppy seeds, chana dal and bay leaves for two to three minutes or till fragrant.
- Remove from heat and set aside to cool. Grind to a fine powder in an electric grinder.
- Add nutmeg and dry ginger powder and grind again for half a minute.
- Sieve the mixture and store in the refrigerator in an airtight jar.
