  • 2 cups Rice
  • to taste Oil
  • to shallow fry Oil

Method

  1. Wash and soak rice in four cups of water for twelve hours. Drain and grind to a fine paste using half a cup of water.
  2. Add salt and three and a half cups of water to get a flowing consistency.
  3. Heat the dosa tawa and pour just enough oil to grease it. Stir and pour a ladle full of batter starting from the outer edge moving towards the centre so that it spreads in a thin, even layer.
  4. Do not use the ladle to spread it. Cover and cook for ten to fifteen seconds. Remove carefully, fold into a triangle and serve immediately.
