Ingredients list for Muffin Omelette

  • 5 Egg
  • 1/4 large Cheese
  • 1/4 large Yellow capsicum
  • 1/4 large Green capsicum
  • to taste Salt
  • to taste Black pepper powder
  • 1 medium Onion chopped
  • 3-4 Black olives sliced
  • 2 Pickled jalapenos sliced
  • 1 cup Cheese grated
  • 8 tablespoons Extra virgin olive oil

Method

  1. Preheat oven at 180°C. Roughly chop 3 coloured peppers (capsicums) in a chopper. Arrange 8 muffin moulds on a baking tray. Put some of the chopped peppers in each mould.
  2. Break eggs into a bowl, add salt, pepper powder, onion, olives and whisk.Pour the egg mixture into the moulds. Put some jalapeno slices and cheese on top.
  3. Drizzle a little extra virgin oil over each. Place the tray in the preheated oven and bake till set. Remove from moulds and serve hot.
