Roughly chop 3 coloured peppers (capsicums) in a chopper. Arrange 8 muffin moulds on a baking tray. Put some of the chopped peppers in each mould. Break eggs into a bowl, add salt, pepper powder, onion, olives and whisk.Pour the egg mixture into the moulds. Put some jalapeno slices and cheese on top. Drizzle a little extra virgin oil over each. Place the tray in the preheated oven and bake till set. Remove from moulds and serve hot.
