Momos

Momos are steamed dumplings filled with vegetables, meat, or paneer, flavoured with spices and served with a tangy spicy chutney. A popular street food from Tibet, Bhutan, Nepal and North East Indian region. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup chicken mince
    Dough
  • 1 cup refined flour (maida)
  • Salt to taste
    Stuffing
  • 1 small onion, chopped
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tsp sesame oil
  • 1½ tsps soy sauce
  • 2 tbsps chopped fresh coriander leaves 
  • 1 tsp finely chopped garlic
  • 2 tsps red chilli sauce
  • Schezwan sauce to serve

Method

  1. For the dough, add refined flour, salt and sufficient water in a large bowl and knead to a semi-stiff dough.  
  2. For the stuffing, take chicken mince in another bowl, add onion, salt, crushed black peppercorns, sesame oil, soy sauce, chopped coriander and garlic and mix till well combined.
  3. Add red chilli sauce and mix well. Set aside.
  4. Lightly knead the dough and divide into small portions. Roll each portion in a ball.
  5. Roll the dough balls into small discs. Stuff each disc with a portion of the prepared chicken mixture and shape them into momos. 
  6. Heat sufficient water in deep pan, place the momos basket lined with parchment paper on it and arrange the prepared momos in it and steam for 10-12 minutes.
  7. Serve hot with schezwan sauce.
