Ingredients list for Mixed Vegetable Soup - SK Khazana

  • 2 tablespoons Green peas boiled
  • 2 tablespoons Carrots boiled
  • 2 tablespoons French beans boiled
  • 2 tablespoons Sweet corn boiled
  • 1/2 tablespoon Butter
  • 2 teaspoons Olive oil
  • 1 tablespoon Garlic finely chopped
  • 6-8 Black peppercorns
  • 1 small Onion sliced
  • 1 1/2 tablespoons Refined flour (maida)
  • 3 cups Vegetable stock
  • to taste Salt
  • 1/4 teaspoon White pepper powder
  • 2 tablespoons Fresh cream
  • Crushed black peppercorns to sprinkle
  • for garnish Fresh parsley spings

Method

  1. Heat butter and olive oil in a non-stick pan, add garlic, mix and sauté for 30 seconds.
  2. Add black peppercorns and onion, mix and sauté till translucent.
  3. Add refined flour, mix and sauté for 1 minute. Add vegetable stock and mix well and cook till the mixture thickens. Switch the heat off.
  4. Blend the prepared mixture with an electric hand blender till smooth. Strain the mixture into another pan and place it back on heat.
  5. Add green peas, carrot, French beans and sweet corn and mix well. Add salt and white pepper powder and mix well. Let the mixture come to a boil.
  6. Switch the heat off, add fresh cream, and mix well.
  7. Transfer the prepared soup into a serving bowl, sprinkle crushed black peppercorns and garnish with parsley sprig and serve hot.
