Methi Kela Bhaji

Ingredients 

  • 3 cups finely chopped fresh fenugreek leaves 
  • 3-4 ripe bananas
  • 2 inch Ginger piece
  • 3-4 green chillies
  • 4 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder

Method

  1. Cut the bananas into roundels with their skin on. Make a paste of the ginger and green chillies. Heat the oil in a kadai. Add the mustard seeds
  2. When they start to splutter, add the methi leaves and salt. Cook for ten to fifteen minutes on medium heat. Add turmeric powder and mix.
  3. Add ginger-green chilli paste. Stir-fry for a minute. Add coriander and cumin powder. Mix well. Cook for one to two minutes.
  4. Add banana roundels. Adjust seasoning. Cook covered on low heat for two minutes. Serve hot with chappatis/rotis of your choice.
