Ingredients
- 1 cup whole red lentil
- ½ tablespoon oil
- 1 medium onion, chopped
- ¾ cup chopped pumpkin
- 1 medium carrot, chopped
- 1 medium tomato, chopped
- ½ tablespoon finely chopped garlic
- 4-5 coriander roots, washed
- Salt to taste
- 1½ tablespoons butter
- Burnt garlic for garnish
- Chives for garnish
Method
- Add Tata Sampann Masoor Whole in a bowl and add sufficient water. Soak for 20-25 minutes.
- Heat oil in a non-stick pressure cooker, add onion, pumpkin, carrot, tomato, and garlic. Mix well and cook for 1-2 minutes.
- Break coriander roots and add to the cooker. Add soaked dal and mix well.
- Add salt, and mix well. Add 3 cups water and mix well. Place the lid on and cook till 4-5 whistles are released.
- Allow the pressure to settle completely. Blend the mixture using an electric hand blender till smooth.
- Add butter and mix well. Strain the soup into another pan, adjust seasoning and transfer to a serving bowl.
- Garnish with burnt garlic and chives. Serve hot.
