Ingredients list for Mango and Berry Muffins

  • 1 medium Ripe mango peeled and sliced
  • 1/4 cup Cranberries dried
  • 1¼ cups + for dusting Refined flour (maida)
  • 1/3 cup Castor sugar (caster sugar)
  • 3/4 cup Butter
  • 1 1/3 cups Buttermilk
  • 3 Eggs

Method

  1. Preheat the oven to 180º C.
  2. Sieve the refined flour in a bowl. Add the castor sugar and mix well.
  3. Melt the butter in the microwave for one minute.
  4. Beat together the buttermilk and eggs in another bowl. Add the melted butter and mix well.
  5. Add the buttermilk mixture to the flour mixture and mix well into a batter.
  6. Dust the mangoes and cranberries with some flour and add to the batter, mix well.
  7. Pour the batter into silicon muffins moulds till three fourth. Put the moulds in the preheated oven and bake for twenty to twenty-five minutes. Remove from heat and cool.
  8. Demould and serve.
