Ingredients list for Mango and Berry Muffins
- 1 medium Ripe mango peeled and sliced
- 1/4 cup Cranberries dried
- 1¼ cups + for dusting Refined flour (maida)
- 1/3 cup Castor sugar (caster sugar)
- 3/4 cup Butter
- 1 1/3 cups Buttermilk
- 3 Eggs
Method
- Preheat the oven to 180º C.
- Sieve the refined flour in a bowl. Add the castor sugar and mix well.
- Melt the butter in the microwave for one minute.
- Beat together the buttermilk and eggs in another bowl. Add the melted butter and mix well.
- Add the buttermilk mixture to the flour mixture and mix well into a batter.
- Dust the mangoes and cranberries with some flour and add to the batter, mix well.
- Pour the batter into silicon muffins moulds till three fourth. Put the moulds in the preheated oven and bake for twenty to twenty-five minutes. Remove from heat and cool.
- Demould and serve.
