Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for MASOOR DAL SOUP - skk Recipe

  • Tata Sampann Masoor Whole 1 cup

  • Oil 1 tablespoon

  • Medium onion chopped 1

  • Pumpkin chopped 3/4 cup

  • Medium carrot peeled and chopped 1

  • Medium tomato chopped 1

  • Garlic finely chopped 1/2 tablespoon

  • Fresh coriander roots washed 4-5

  • Salt to taste

  • Butter 1 1/2 tablespoons

  • Burnt garlic to garnish

  • Chives to garnish

Method

Step 1

Take Tata Sampann Masoor Whole in a bowl, add sufficient water and soak for 20-25 minutes.

Step 2

Heat oil in a pressure cooker, add onion, pumpkin, carrot, tomato, and garlic. Mix well and cook for 1-2 minutes.

Step 3

Break coriander roots and add to the cooker. Add soaked dal, mix well and saute for 1-2 minutes. Add salt and mix well. Add 3 cups water and mix well. Place the lid on and cook under pressure till 4-5 whistles are released.

Step 4

Allow the pressure to reduce completely before opening the cooker. Blend the mixture using an electric hand blender till smooth.

Step 5

Add butter and mix well. Strain the soup into another pan and adjust salt.

Step 6

Pour the soup into individual soup bowls, garnish with burnt garlic and chives and serve hot.
