Ingredients list for Lemon Pistachio Cheesecake

  • Lemon zest of 1 lemon + for decoration
  • for garnishing Pistachios finely chopped, 75 grams +
  • 250 grams Cream cheese
  • 125 grams Graham crackers
  • for greasing Butter
  • + 2 tablespoons Unsalted butter melted, ¼ cup
  • 1 tablespoon Condensed milk ¼ cup +

Method

  1. Grind together the crushed pistachios and graham crackers. Add melted butter and grind till a damp mixture is formed.
  2. Transfer the prepared mixture into a five inch loose bottom tin and press to form the crust. Refrigerate for thirty minutes.
  3. Beat together cream cheese, lemon zest and condensed milk till smooth and well combined.
  4. Pour this mixture over the crust and level it out. Garnish with crushed pistachios and refrigerate overnight.
  5. Cut into wedges and serve.
