Ingredients list for Lemon Pepper Pasta
- 1 Penne pasta
- 1 teaspoon Red capsicums
- 2 Pickled jalapenos
- 2 medium Red capsicum
- 1 teaspoon Black peppercorns,crushed
- 200 grams Penne ,boiled
- 2 tablespoons Extra virgin olive oil
- 5-6 Sundried tomatoes
- 2 tablespoons Garlic,chopped
- to taste Salt
Method
- Heat extra virgin olive oil in a non stick pan. Roughly chop red capsicum (pepper) and put into a blender jar. Add sundried tomatoes and a little water and blend into a puree.
- Add garlic to the pan and sauté till golden brown. Chop jalapeno peppers. Add the puree to the pan and mix well. Add salt and pasta and mix well.
- Add crushed peppercorns and lemon zest and mix well. Squeeze the juice of a lemon and add and mix well. Transfer into a serving dish, garnish with jalapenos and serve hot.
