French cuisine was codified in the 20th century as the modern haute cuisine. Knowledge of French cooking has contributed significantly to Western cuisines and its criteria are used widely in Western cookery school boards and culinary education. 
French regional cuisine is characterized by its extreme diversity and style. Traditionally, each region of France has its own distinctive cuisine.

Ingredients for Lemon Mousse Recipe

  • Lemon Juice 100 millilitres

  • Egg Yolks 2 teaspoons

  • Gelatin 10 grams

  • Egg yolks 5

  • Sugar 100 grams

  • Cream, whipped 250 millilitres

  • Pistachios blanched and chopped 10

Method

Step 1

Melt the gelatin in three and a half tablespoons of water over a double boiler.

Step 2

In a bowl, take egg yolks and gradually beat in the sugar, lemon juice and lemon rind.

Step 3

Set the bowl over a pan of simmering water and beat until the mixture is light and thick.

Step 4

Whisk in the melted gelatin into the lemon mixture and refrigerate it for two minutes.

Step 5

Fold in the whipped cream into the mixture and pour the mousse into a glass bowl.

Step 6

Decorate the top with chopped pistachios and refrigerate it until set.
