By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Green Peas , French Beans Cuisine Indian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Khatu Meethu Estew 150 grams Green Peas 100 grams French Beans 250 grams Onions 2 medium Sweet potatoes to shallow fry Oil 3 Tomatoes chopped 3-4 Green chillies chopped 3 tablespoons Fresh coriander leaves chopped 1/2 bunch Fresh mint leaves chopped 3 Carrots 2 medium Potatoes 250 grams Yam 6-8 cloves Garlic,chopped 1 inch piece Ginger 3 tablespoons Vinegar 2 tablespoons Sugar to taste Salt Method Advertisment String the fresh beans and cut it into dices, peel the pickling onion, peel and cut the carrots, potatoes, yam and sweet potatoes into dices. Heat oil and shallow fry all the above vegetables individually. Heat 2 tablespoons of oil in a pan and sauté the sliced onion till light golden in colour then add chopped tomatoes, chopped green chillies, chopped coriander leaves, chopped mint leaves, chopped ginger and chopped garlic. Cook on a slow heat for 4-5 minutes. Add the fried vegetables and mix. Then add vinegar, sugar and salt. Simmer for 4 - 5 minutes remove and serve hot.
