Ingredients list for Kastoori Kabab

  • 2 Chicken Breast
  • 1 tablespoon Gram Flour
  • 1 tablespoon Garlic paste
  • Juice of 1 lemon
  • 1/2 teaspoon White pepper powder
  • to taste Salt
  • 1 tablespoon Butter
  • 2 tablespo Oil
  • 1/2 teaspoon Caraway seeds (shahi jeera)
  • 3 tablespoons Gram flour (besan)
  • 2 tablespoons Bread crumbs
  • a pinch Green cardamom powder
  • 1/2 grams Saffron (kesar)
  • 4 tablespoons Fresh cream
  • 2 Green chillies
  • a few sprigs Fresh coriander leaves
  • 2 Eggs
  • to sprinkl Chaat masala


  1. Slice chicken breasts into thin diagonal pieces and put them into a bowl.
  2. Add ginger paste, garlic paste, lemon juice, white pepper powder and salt and mix well.
  3. Keep aside for 10-15 minutes to marinate. Heat butter and 1 tsp oil in a non stick kadai.
  4. Add shahi jeera and sauté till fragrant.
  5. Add gram flour and sauté on low heat for 2-3 minutes. Add marinated chicken, breadcrumbs, green cardamom powder and saffron and mix.
  6. Transfer into a bowl. Add fresh cream and mix. Finely chop green chillies and coriander leaves, add to the chicken and mix.
  7. Keep aside for 15-20 minutes. Break eggs and separate whites and yolks.
  8. Whisk the egg whites till light and fluffy. String the chicken pieces onto satay sticks and spread the remaining marinade over them.
  9. Heat the remaining oil in a non stick pan. Grill the chicken till evenly golden.
  10. Spread the egg whites over the chicken. Cover and cook for 2-4 minutes.
  11. Transfer the kastoori kababs onto a plate, sprinkle some chaat masala and serve hot.
