Ingredients list for Kastoori Kabab
- 2 Chicken Breast
- 1 tablespoon Gram Flour
- 1 tablespoon Garlic paste
- Juice of 1 lemon
- 1/2 teaspoon White pepper powder
- to taste Salt
- 1 tablespoon Butter
- 2 tablespo Oil
- 1/2 teaspoon Caraway seeds (shahi jeera)
- 3 tablespoons Gram flour (besan)
- 2 tablespoons Bread crumbs
- a pinch Green cardamom powder
- 1/2 grams Saffron (kesar)
- 4 tablespoons Fresh cream
- 2 Green chillies
- a few sprigs Fresh coriander leaves
- 2 Eggs
- to sprinkl Chaat masala
Method
- Slice chicken breasts into thin diagonal pieces and put them into a bowl.
- Add ginger paste, garlic paste, lemon juice, white pepper powder and salt and mix well.
- Keep aside for 10-15 minutes to marinate. Heat butter and 1 tsp oil in a non stick kadai.
- Add shahi jeera and sauté till fragrant.
- Add gram flour and sauté on low heat for 2-3 minutes. Add marinated chicken, breadcrumbs, green cardamom powder and saffron and mix.
- Transfer into a bowl. Add fresh cream and mix. Finely chop green chillies and coriander leaves, add to the chicken and mix.
- Keep aside for 15-20 minutes. Break eggs and separate whites and yolks.
- Whisk the egg whites till light and fluffy. String the chicken pieces onto satay sticks and spread the remaining marinade over them.
- Heat the remaining oil in a non stick pan. Grill the chicken till evenly golden.
- Spread the egg whites over the chicken. Cover and cook for 2-4 minutes.
- Transfer the kastoori kababs onto a plate, sprinkle some chaat masala and serve hot.
