History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Kalakand Nest Recipe

  • Kalakand readymade 200 grams

  • Samosa pattis cut into 2 inch thin strips 3-4

  • A pinch of saffron strands + for garnish

  • Warm milk 1 tablespoon

  • Pistachios chopped 1 tablespoon

  • Almonds chopped 1 tablespoon

Method

Step 1

Preheat oven at 180° C.

Step 2

Line individual small tart moulds with samosa patti strips and place the prepared moulds on the baking tray. Place the baking tray in preheated oven and bake for 8-10 minutes. Remove from oven, cool and demould the nests.

Step 3

Take a pinch saffron strands in a bowl. Add 1 tablespoon warm milk, mix and set aside for 2-3 minutes.

Step 4

Take kalakand in another bowl. Add infused saffron milk, pistachios and almonds and mix well.

Step 5

Make quenelle of kalakand mixture and place in each nest.

Step 6

Serve immediately garnished with few saffron strands.
