Kaddu ki Khatti Meethi Subzi Red pumpkin is a vegetable not many like to eat, but when cooked this way they will not be able to resist This recipe is from FoodFood TV channel By Sanjeev Kapoor 16 Feb 2022 in Recipes Course New Update Main Ingredients Red pumpkin (kaddu), Tamarind paste Cuisine Indian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 21-25 minutes Serve 4 Taste Sweet & Sour Level of Cooking Easy Others Veg Advertisment Ingredients list for Kaddu ki Khatti Meethi Subzi 400 grams Red pumpkin (kaddu) , peeled and cut into 1 inch cubes 3 tablespoons Tamarind paste 1/2 cup Jaggery , grated 2 tablespoons Oil 1 tablespoon Ginger , finely chopped 1-2 Green chillies , finely chopped 1/4 teaspoon Asafoetida 1/4 teaspoon Turmeric powder 1 teaspoon Red chilli powder 2 teaspoons Garam masala powder to taste Salt 1 tablespoon Fresh coriander leaves , chopped 1 Green chilli , slit for garnish Fresh coriander sprig Method Heat oil in a non-stick pan, add ginger and green chillies, mix and sauté till fragrant. Add asafoetida, mix and sauté for a minute. Add pumpkin cubes and cook for 4-5 minutes. Add turmeric powder, red chilli powder, 1 tsp garam masala powder and salt, mix well and sauté for a few minutes. Add tamarind paste and jaggery, mix and cook till the jaggery melts. Add some water, mix, cover and cook for 8-10 minutes. Mash the pumpkins slightly, add coriander leaves and remaining garam masala powder and mix well.
