The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.
Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet. 
Everybody knows about the unbeatable taste of the Mumbai’s chaats! But there is so much more to explore and savour in the other regions of Maharashtra.

Ingredients for Jowar Bhakri - SK Khazana Recipe

  • Sorghum (jowar) flour 1 cup

  • Salt 1/4 teaspoon

  • Oil 1/2 teaspoon

  • Whole wheat flour for dusting

  • Onion wedges to serve

  • Lemon wedges to serve

Method

Step 1

Take sorghum flour in a parat, add salt, oil and sufficient water and knead into a soft dough. Cover with a muslin cloth and set aside for sometime.

Step 2

Divide the dough into equal balls. Dust whole wheat flour on worktop, keep each dough ball on it and pat with your palm and fingers into a round bhakri.

Step 3

Heat a non-stick tawa and place the bhakri on it, sprinkle some water, spread around with fingers. Cook for 2 minutes and flip. Cook for a minute, lift it with tongs and place on direct flame till it puffs up. Transfer onto a serving plate.

Step 4

Make more bhakri similarly.

Step 5

Serve hot with an onion wedge and a lemon wedge.
