How to make Jasmine Rice -

How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Jasmine Rice Recipe

  • Basmati rice 1 1/2 cups

  • Jasmine flowers

  • Jasmine flowers 20-25

  • Oil chopped 2 tablespoons

  • Yellow capsicum seeded and chopped 1/2 medium

  • Red capsicum seeded and chopped 1/2 medium

  • Salt to taste

  • Spring onion greens chopped 3-4 stalks

Method

Step 1

Soak rice in four cups of water for half an hour. Drain.

Step 2

Boil five cups of water with salt. Add soaked rice. After a while make a potli of jasmine flowers and add to the water for a short time. When the rice is half done remove the potli, drain the water and keep the rice aside.

Step 3

Heat oil in a pan. Add chopped onion and sauté. Add chopped yellow and red capsicums and sauté. Add rice and stir gently. Add salt, spring onion greens, cover and cook till the rice is fully done but the grains remain separated.

Step 4

Serve hot.
