Ingredients list for Jacket Chicken

  • 250 grams Boneless Chicken cut into big pieces
  • 1/2 medium Medium onion
  • 2 Spring onion with greens
  • 1 inch Ginger peeled
  • 1 cup Sliced button mushrooms
  • 1 tablespoon Dark soy sauce
  • 1 tablespoon Hoisin sauce
  • 2 tablespoons Red chilli sauce
  • 1 teaspoon Chilli vinegar
  • 2 teaspoons Sesame oil
  • 4-5 Fresh coriander sprigs

Method

  1. Preheat oven at 180º C.
  2. Cut onion into big cubes, roughly chop spring onions with greens, slice ginger and transfer everything into a bowl.
  3. Add button mushrooms, chicken pieces, soy sauce, hoisin sauce, red chilli sauce, chilli vinegar and sesame oil and mix well.
  4. Roughly tear fresh coriander sprigs and add and mix well.
  5. Place 4 pieces of aluminum foil on the worktop. On each piece place a single portion of mushroom-chicken mixture in the center and fold the three open sides and seal.
  6. Place the chicken jackets in a cake tin, put the tin in the preheated oven and bake for 30 minutes.
  7. Remove from the oven, open the chicken jacket and serve immediately.
