Ingredients
- 250 gms noodles
- 1 teaspoon oil
- 2 spring onion with greens
- 1 inch ginger, sliced
- 2 fresh red chillies
- 3 cups vegetable stock
- ½ cup corn kernels
- Salt to taste
- ⅓ cup cornstarch slurry
- 1 teaspoon vinegar
Method
- Heat sufficient water in a non-stick pan. Add noodles and cook.
- Heat oil in a non-stick pan.
- Slice spring onion with greens.
- Add sliced spring onion bulbs to the pan along with ginger and saute well.
- Finely chop red chillies.
- Add vegetable stock and corn kernels, stir well and simmer.
- Add chopped red chillies, stir to mix and let it simmer. Add salt and cornstarch slurry, mix well and boil.
- Strain the noodles and add to the soup along with vinegar. Mix well and bring to a boil.
- Add sliced spring onion greens, mix well and serve piping hot.
