Hot Cross Buns A festival speciality eaten mostly on Good Friday with a sugar glaze on top. By Sanjeev Kapoor 07 Mar 2019 in Recipes Course New Update Main Ingredients Refined flour, Fresh yeast Cuisine British Course Breads Prep Time 41-50 minutes Cook time 11-15 minutes Serve Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Hot Cross Buns 3 1/4 cups Refined flour 2 teaspoons Fresh yeast 3 1/2 tablespoons Sugar 1 1/2 cups Lukewarm milk a pinch Salt 2 tablespoons Butter 1/2 cup Tutti frutti For glaze 2 tablespoons Sugar Method Sieve flour and salt into a large bowl. Dissolve yeast in lukewarm water and keep aside. Dissolve sugar and water in another bowl. Add both mixtures to the sifted flour and mix. Add milk, a little at time, till all of it is incorporated into the dough. Knead till the dough is soft and smooth. Cover with a damp cloth and rest the dough till it doubles in volume. Preheat oven to 240°C/475°F/Gas Mark 9. Knock back* the dough and add tutti frutti. Form into round buns (how many), marking a cross on the top with the back of a knife. You can also cut very thin strips of dough and arrange them on the top of the buns in a cross. Set them aside to rise for another fifteen minutes on a gresed tray. Bake in the preheated oven for ten minutes. Mix the sugar with a tablespoon of water and heat gently till the sugar dissolves. Brush the buns with this mixture immediately on taking them out of the oven.
