Ingredients 

  • 4 basa fish fillets
  • 4 white bread slices
  • 3-4 sprigs fresh coriander leaves
  • 8-10 fresh mint leaves
  • 6-7 fresh basil leaves
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • Juice of ½ lemon

Method

  1. Preheat oven to 180° C.
  2. Place fish fillets in a bowl, add ginger-garlic paste, salt and lemon juice, mix well and set aside to marinate for five to seven minutes.
  3. To make the crust, tear the bread slices and put them in a grinder jar. Add parsley, coriander leaves, mint leaves, torn basil leaves and a half teaspoon of butter and grind into a coarse powder.
  4. Line a baking tray with aluminium foil and grease the foil with a little butter.
  5. Add crushed red chillies to the crust mixture and mix well.
  6. Arrange the marinated fish fillets on the lined baking tray and place the crust mixture over each fillet. Press well.
  7. Keep the tray in the preheated oven and bake for five to seven minutes or till the fish is tender.
  8. Serve hot.
