Grilled Paneer with Butter Caramel Sauce

Grilled paneer pieces topped with velvety caramel sauce. The caramel sauce is made with butter and brown sugar with hint of cinnamon powder. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 250 grams paneer (cottage cheese)
  • 1/2 cup brown sugar
  • 3 tablespoons butter
  • 1/4 teaspoon cinnamon powder
  • 1/2 cup fresh cream
  • Fresh mint sprigs for garnish
  • 1 teaspoon oil

Method

  1. Cut cottage cheese into small cubes and skewer them onto satay sticks.
  2. Heat oil and 1 tablespoons Nutralite in a non-stick pan. Place the skewers in it and cook, rotating the skewers, till lightly browned from all sides. Remove from heat.
  3. Add brown sugar to the same pan, with remaining Nutralite and cinnamon powder, mix and cook till the sugar melts completely.
  4. Add cream, mix and cook till the sauce thickens. Switch off heat.
  5. Coat the skewers with the prepared sauce and place on a serving platter.
  6. Heat the remaining sauce once again and pour over the skewers. Garnish with a mint sprig and serve warm.
