Ingredients list for Green Rice

  • 1 1/2 cups Rice
  • 2 tablespoons Green Capsicum
  • 1 Onion finely chopped
  • 5 cloves Garlic finely chopped
  • 3 medium Tomatoes chopped
  • 3 cups Vegetable stock
  • to taste Salt
  • 1/2 teaspoon Black pepper powder
  • 2 Green capsicums thin strips
  • 1/2 cup Stuffed olives

Method

  1. Clean, wash and soak the rice for few minutes. Drain and keep aside. Heat one tablespoon oil in a pan, add onion and garlic and sauté till transluscent. Add tomatoes and stir-fry till tomatoes turn pulpy. Add the drained rice and sauté for two minutes. Add vegetable stock, salt and black pepper powder and mix well. Cover the pan and simmer gently for twenty minutes or until the rice is cooked.
  2. Just before serving, heat the remaining oil in another pan and stir-fry green capsicums till they are crisp while ensuring that they retain the colour. Add capsicum to the cooked rice and stir in gently. Garnish it with sliced olives and serve hot.
