Ingredients list for Frittata
- 100 grams Spaghetti
- 2 Eggs
- 1 medium Onion sliced
- 1 medium Green capsicum sliced
- 1 large Tomato cubed
- 2 tablespoons Olive oil
- 1/4 cup Low fat milk
- to taste Salt
- 3-4 Peppercorns crushed
- 50 grams Mozzarella cheese thinly sliced
Method
- Preheat oven to 190 C. Cook spaghetti in three cups of salted boiling water till al dente. Drain, refresh in cold water and drain again.
- Apply one tablespoon of oil to prevent it from sticking together. Heat one tablespoon of olive oil in a pan and cook onion and capsicum for two to three minutes or until very soft.
- Add spaghetti and tomato. Toss lightly to mix. Add salt and toss again.
- In a large bowl beat the eggs with a fork. Add milk, salt and crushed peppercorns and mix well. Transfer the spaghetti into a baking dish.
- Pour the egg mixture on top. Arrange the cheese slices on top and bake, uncovered, for twenty to twenty five minutes at 190 C. Serve hot.
