  • 125 grams Almond flour
  • 85 grams Refined flour (maida)
  • 150 grams Butter
  • + for dusting Icing sugar 200 grams
  • For topping Orange zest of ½ orange +
  • 200 grams Egg whites
  • Orange juice of ¼ orange


  1. Preheat oven to 180ºC.
  2. Heat butter in a non-stick pan till light golden. Remove from heat and cool.
  3. Sift together almond flour, refined flour and icing sugar into a bowl and mix well. Add orange zest, mix and set aside.
  4. Take egg whites in a bowl and whisk till foamy. Add flour mixture and fold gently. Add butter gradually and mix well. Add orange juice and mix again.
  5. Fill a piping bag with this mixture and pipe into silicon cupcake moulds and tap. Top each mould with some orange zest.
  6. Keep the moulds on a baking tray. Place the baking tray in the preheated oven and bake for 20-25 minutes. Remove from oven and cool.
  7. Demould, dust some icing sugar on top and serve.
