Ingredients
- ½ cup dried figs, chopped
- ½ cup California walnuts
- 2 cups refined flour (maida) rotis + for coating
- 2 tablespoons honey
- ½ teaspoon cinnamon powder
- 1 cup butter
- 3 tablespoons castor sugar (caster sugar)
- 1 teaspoon vanilla essence
Method
- Line a barfi tray with parchment paper. Blend dried figs, California walnuts, honey and cinnamon powder in a food processor to make a thick and smooth paste. Transfer in a bowl.
- Preheat oven to 170° C.
- Mix together butter and castor sugar in another bowl. Add vanilla essence and mix well. Cream the mixture using an electric beater till light.
- Add 2 cups flour and mix till well combined into a dough. Divide the dough into 2 equal portions and spread one portion on the lined tray.
- Place a thin layer of prepared paste on top of the tray, cover with remaining dough portion and level it out.
- Coat fork with some flour and press it lightly over the prepared tray to create a pattern.
- Put the tray into the preheated oven and bake for 25-30 minutes. Remove from oven, cool and demould. Slice, cut into 1 inch pieces and serve.
