Ingredients list for Egg and Cheese Sandwich

  • 2 Eggs
  • 4-5 Boiled Eggs peeled and halved
  • 4 Cheese slices
  • 8 Brown bread slices
  • to taste Salt
  • 2-3 teaspoons Milk
  • 1 tablespoon Mayonnaise
  • 4-5 Lollo rosso lettuce leaves
  • to taste Crushed black peppercorns
  • 4-5 Iceberg lettuce leaves

Method

  1. Heat a non-stick pan.
  2. Break eggs into a bowl, add salt and whisk well. Add milk and whisk again. Add mayonnaise and mix well.
  3. Pour egg mixture into the hot pan and cook, stirring continuously, till the eggs are scrambled and cooked. Transfer the scrambled eggs into a bowl.
  4. Roughly chop boiled eggs in a chopper and add them to the scrambled eggs.
  5. Finely chop lollo rosso lettuce leaves and add to the same bowl. Add salt and crushed peppercorns and mix well.
  6. Place iceberg lettuce on 4 bread slices, spread egg mixture over them, top with a cheese slice and cover each sandwich with remaining bread slices.
  7. Halve all the sandwiches, arrange them on a serving plate and serve immediately.
