Ingredients list for Egg and Cheese Sandwich
- 2 Eggs
- 4-5 Boiled Eggs peeled and halved
- 4 Cheese slices
- 8 Brown bread slices
- to taste Salt
- 2-3 teaspoons Milk
- 1 tablespoon Mayonnaise
- 4-5 Lollo rosso lettuce leaves
- to taste Crushed black peppercorns
- 4-5 Iceberg lettuce leaves
Method
- Heat a non-stick pan.
- Break eggs into a bowl, add salt and whisk well. Add milk and whisk again. Add mayonnaise and mix well.
- Pour egg mixture into the hot pan and cook, stirring continuously, till the eggs are scrambled and cooked. Transfer the scrambled eggs into a bowl.
- Roughly chop boiled eggs in a chopper and add them to the scrambled eggs.
- Finely chop lollo rosso lettuce leaves and add to the same bowl. Add salt and crushed peppercorns and mix well.
- Place iceberg lettuce on 4 bread slices, spread egg mixture over them, top with a cheese slice and cover each sandwich with remaining bread slices.
- Halve all the sandwiches, arrange them on a serving plate and serve immediately.
