Ingredients list for Dodol

  • 250 grams Rice
  • 4 cups Coconut Scraped
  • 375 grams Coconut molasses
  • 1/2 cup Cashewnuts chopped
  • 1 tablespoon Butter
  • 1 teaspoon Vanilla essence

Method

  1. Wash and soak rice overnight. Next morning drain and grind it finely and keep aside. Grind the scraped coconut with enough water and extract 3 cups thick coconut milk. Mix the coconut milk with the rest of the ingredients until well combined. In a deep pan cook the mixture on medium heat stirring continuously, till it is reduced to half its original quantity and starts leaving the sides of the pan. Turn out contents onto a greased dish/plate and spread evenly. Cool, cut into thick slices and serve.
